Wagamama is not about fast food – it’s about good food, fast. Customers expect to be served as soon as they arrive, and they expect their food to be ready within minutes.
To manage this, Wagamama is using kitchen display technology from Oracle Hospitality. Orders are taken using handheld POS clients and sent directly to the kitchen, where they appear on the kitchen display system (KDS) for the chefs to see. Oracle Hospitality KDS organizes the incoming orders, allowing the chef to focus purely on providing tasty food.
We met up with Steven Mangleshot, Wagamama’s executive chef, to talk about the benefits that KDS technology has delivered. Since implementing the system at Wagamama, Steven has found massive organizational improvements and increased efficiency in the kitchen, helping his team stay on top of customer demand while providing high quality, fresh food, fast.
When a server submits an order it is almost instantaneously delivered to the KDS screens, telling the chefs when to start cooking, when the order was placed, and highlighting whether a dish is behind schedule by categorizing the tabs into different colors.
The KDS touchscreens are placed directly in front of each chef for convenience, giving them complete flexibility, freeing up their hands and preventing them from making mistakes. The touch screen capabilities also allow them to quickly complete the order on the system and pass the food over to the server.
For the chefs at wagamama, it was a big adjustment from their previous method of processing orders, but they quickly learned just how much it helps to improve service. Mangleshot even notes in the video interview, ‘’If I now said let’s take the kitchen display systems out, they would probably rip one of my arms off!’’
